Like Australia’s favourite sherbet, this is tangy, fizzy, and delicious all around. The batches were picked at different times for balanced natural acidity, body, flavour and sweetness. Zesty Riesling from the Adelaide Hills, super rich Muscat and bright, tropical Verdelho from the Limestone Coast, and a bit of old oak make for a delicious lightly sparkling drop with thyme flower and key lime pie characters, racy acidity and a creamy mousse texture.
